Would it be possible to use this switch in the steering wheel to trigger the relay below and activate the additional 6v battery which would complete an 18v circuit?

I have the 12v/6v circuit all figured out, and i have another spst switch i was going to use, but i thought it would be cool to have it right on the steering wheel. Just not sure if that switch would handle the 12v signal. I have some 16G wire i could run from that switch to the relay.

Note: that switch currently completes a circuit that makes a car engine sound when pressed.

Relays don't pull a lot of current (50-150mA depending on the relay type & size), so I would expect you're probably ok. Even a small momentary switch will typically be rated for > 250mA.
